Description

The Nossa Senhora do Carmo site is located in the Serra da Mantiqueira region, in the municipality of Cristina, south of Minas Gerais and is located at an average altitude of 1450 meters. The region has a mountainous topography and an altitude subtropical climate that favors the production of specialty coffees. The property was acquired in 2016, and the owner, Luziane, is attentive of the quality of the coffee produced using the yellow Bourbon variety, covering a total area of two hectares, one hectare planted with coffee trees, and the rest pasture. To ensure quality, the crops are tended to with the support of agronomists from SENAR and COCARIVE, who monitor all stages of production,l treatment and post-harvest. The owner Luziane and her husband Ronaldo, run the property in the family farming system, participating in all stages of coffee production, such as fertilization, ruting, harvesting and drying. The owner's oldest daughter, Aline, helps with the drying process. The family always seeks to produce sustainably, respecting springs and forests on the property. Harvesting begins when the cherries are ripe. The coffee is harvested manually on the cloth, avoiding the contact of the beans with the ground. The coffee is washed daily to separate the beans and then transported to the suspended terrace for drying. The coffee is placed on the terrace in thin layers and rotated 12 to 15 times a day, until it reaches a humidity of 11%. After drying, the lots were separated and placed in wooden bins to rest. Then the batches were taken to the COCARIVE warehouse, which today has modern machinery for preparing the coffee batches. The selected beans are analyzed by experts from COCARIVE, aiming to offer the market high quality batches. Finally, the batch has a yield of 6 bags of processed coffee.
