Paraiso varietal from Brazil. Paraiso was developed by EPAMIG (Minas Gerais Agricultural Research and Development Company) and released in 2012. It is a hybrid of Yellow Catuai and Timor. Paraiso is prized for its high productivity and strong disease resistance, as well as its high cup quality.
This natural lot was machine harvested and then separated by density and ripeness with ripe cherries being selected. From here the coffee was taken to dry on the patios and turned regularly until it reached 11.35% moisture. Then the coffee was rested in wooden silos for 10 days before being milled and bagged and taken to the cooperative.
This coffee tastes nothing like your typical Brazilian coffee. It’s vibrant ripe fruit notes shone brightest on the cupping table. This is the best score of Brazilian coffee we got!
