This coffee comes from Piendamó, a small municipality near Cauca’s capital city. The region is known mainly for two things: its large indigenous population and its resistance to government acts regarding illegal crops.
This community lot comes from the growers that have decided to step aside from the conflict and do their best to live from coffee, choosing peace over income.
Piendamó is located in a large plateau near a volcano, giving a high acidity to the coffee. Additionally, due to the high altitude of the farms that compose this community lot, the ripening process of the coffee takes longer, providing more time for the sugar consumption and therefore enhancing the sweetness of the coffee.
The processing of the coffee is done in each farm, implying that every grower is responsible for the picking, pulping, fermentation, washing and drying of the coffee, adding complexity to the processing but also enhancing the quality since different lots provide specific attributes. The dominant varieties in this coffee are Tabi, Caturra, Colombia and Pink Bourbon, and the fermentation of the coffees range from 12 to 18 hours, depending on the altitude and temperature while processing.
